Please answer the following questions:

 

First question:                          (16 marks/ 4 for each)

Discuss briefly:

1- Staphylococcus aureus food poisoning

2- Manufacturing of milk powder using spray method 

     3-Gel tests for subclinical mastitis

     4- Defects of egg albumen

 

Second question:                                    (5 marks/ 1 for each)

                                      

Indicate True (T) or False (F) and correct the false one:

1- For manufacturing of condensed milk, sugar is added

      at 2-3%.

2- Blowing in concentrated milk is due to brucella abortus.

3- Food infection occurs due to consumption of food  

     contaminated with exotoxin

4- Milk powder manufactured by spray method is less

    soluble than that manufactured by drum roller method.

5- Hotis test is a confirmatory test for streptococcus  

     agalactiae causing sub-clinical mastitis

Third question:                     (4 marks/ 1 for each)

Give reasons for the followings:

1- Surface coloration in butter

2- Button defect in condensed milk

3- Old eggs float using brine test

4- Thickening in evaporated milk
