AbstractPhenolic compounds and flavonoids of propolis from different regions in Kafrelsheikh governorate were determined. The chemical profile of propolis samples were analysed using GC-MS, as well as the antimicrobial activity was tested according to disc-diffusion protocols against some microbial strains. Also, these extracts were tested as antimicrobial agent in beef burger stored at -18 oC for 6 months. The main identified constituents were characterized as diethyl 2-methylsuccinate, pentanedioc acid, patchouli alcohol, cinnamic acid, isobutylquinoline, menthol and hydrocinnamic acid in all analysed samples. Menthol in propolis collected from Motobes region was the highest (5.13%). Propolis extracts are active against Gram-positive bacteria (Staphylo. Aureus), showing a limited activity against Gram-negative ones (E. coli). Also, propolis extracts exhibit high activity in Candida guilerimondii FTI 20037 higher than that of Aspergillus niger. Also, propolis extracts were efficient to reduce microbial contaminations in beef burger stored at -18 oC comparing with control sample; the samples from Motobes region had the highest activities.
